Combining the French term “brasserie” for informal dining of high quality and the year 1893, which marks the opening year of the first Waldorf Astoria in New York, Brasserie 1893 stands out as a reflection of the trendsetting restaurant ran by the legendary Oscar Tschirky, maitre d’hotel (traditional name for restaurant manager.) Working for many years at Waldorf Astoria New York, Tschirky is credited with the invention of the Waldorf Salad (apple, celery, grapes and nuts elegantly tossed into a salad) and eggs benedict — all signature dishes of Brasserie 1893.
Brasserie 1893 recreates the dishes that have survived many years of culinary revolution and remain classics. The main dining room features 70 seats including a Chef’s Table for 8 guests. The central focus of the restaurant is the show kitchen, which is equipped with two Molteni stoves, reknowned for their surpreme quality.
