No Muss, No Fuss: 3 Little Pigs Keep It Irresistibly Simple at This Year's Burger Fest

What makes for a good burger? You can add fusion ingredients, play with the presentation, or, as Andy Horowitz puts it, keep things "pretty simple."
The owner of Zhangzizhong Lu sandwich joint and meat haven 3 Little Pigs (successor of Andy's Craft Sausages in Sanlitun) prefers to focus on the basics as he preps his hamburgers for this year's Burger Festival. "We start with exceptional ingredients like brisket and steak cuts. We are constantly looking at our recipe and improving it. We are never satisfied! This kind of thinking goes into all the items we serve."
And while that ingredient-centric approach might seem unglamorous at first, Horowitz is quick to point out just how much effort goes into to readying the elements that go into every bite. For instance, the "corned beef took six months of testing before we zeroed in on the recipe and method that resulted in the beef we use for our Reuben & Rachael sandwiches."
He goes on to add that: "Our double chili cheeseburger is one we are very proud of. We use a top chili version of the recipe we cooked to win the Great Leap Back Alley Chili Cookoff twice: People's Choice 2017 and Judges Choice 2019."
Horowitz adds that he can't wait to serve his "chili cheeseburgers, donut burgers and sliders" at this year's Burger Fest as well as his sausage sandwiches and tater tots, "our signature side dish at 3 Little Pigs," which "are better than the Lunch Lady’s because we fry them. Sometimes with duck fat."
