Glengowy Distillery adheres to six basic principles in the production of whisky to ensure the flavour of the whisky. First, Glengoyle insisted on drying the malt rather than peat. One reason for this is that the soil around Dumgoyn does not contain peat. Because there is no smoke in the whisky, any lack of flavor or oak quality defects will be very obvious, therefore, Glengowy spent a lot of energy to ensure the high quality of the whisky.

Second, the whisky production process is full of patience. Glengowy is the slowest distillery in Scotland because it believes that the flavours of whisky are built up bit by bit and that the long process of distilling contributes to the complex flavours of whisky.

Third, use sherry barrel aging. The use of sherry casks has taken Glengoyle to new heights in flavour and colour. Although the price of sherry casks has risen as the number of casks has dwindled, Glengoyle still insists on using expensive sherry casks for the aging of his whisky. Glengoil was involved in every stage of the production of the sherry barrels used. It takes about six years for the casks to be selected, dried and used to age the whisky.

Fourth, treat every barrel of wine carefully during the maturation period. The stone walls and floors of the Grangoy warehouse ensure that every old oak barrel is protected from extreme weather changes. At the same time, the casks are stacked in only three layers to ensure that each barrel of whiskey has enough space to age. This careful arrangement allows the wine and the barrel aroma to achieve a perfect integration.

Fifth, do not use caramel to color, to maintain the natural color of the wine. The color of Glengoil whiskey comes from the oak barrels used for aging. Carefully selected oak from the north of Spain. After three years of natural drying and drying, the oak is used to age the sherry in hand-made oak barrels. Over the course of three years, oak barrels absorb a certain amount of colour and flavour. The sherry is then poured out and the empty casks are used to age Glengoyle's whisky, giving it its natural colour.

Sixth, loyal to the traditional norms and techniques. Every small skill and step in Glengoy's brewing process has been tested by long-term practice, and wineries still strictly follow and use these standards and techniques passed down from generation to generation.
