Burger Brief: Big Smoke Bistro's Portabella Blue Cheese Burger
Burger Brief takes a look at some of the contestants in the Beijinger's 2015 Burger Cup. Now down to the wire with the Elite Eight, we talk to Gordon Kutil of Big Smoke Bistro, whose venue is still in contention for the honor of Beijing's Best Burger.

Venue: Big Smoke Bistro
Name of signature burger: Portabella Blue Cheese Burger
Tell us about your signature burger. What makes it the best burger in Beijing?
This burger is special because it’s 90 percent beef, 10 percent chicken head … [laughs]. Kidding. What makes our burger the best is that we don’t cover it with fatty oils or inject it with stuff. We just let its natural smoky flavors come from the grill.
What does the burger come with?
Our burger comes with a choice of truffle fries, truffle mash or truffle mac and cheese.
What drink from your menu goes best with the burger?
One of our best beers in Beijing brewed by Jing A or a nice glass of our home-style sweet tea.
What other burgers do you have on the menu?
We also have our smoked bacon cheddar burger with real smoked bacon from our smokers!
Aside from your own restaurant's burger, what was the best burger you’ve ever had?
Hmm … The best burger I’ve ever had would have to be the ones we would grill out on a nice summer day on the patio back home in Tennessee. Can’t beat a cold Corona – with lime – and a homemade burger. Yummy!
