America's First Master Sommelier comes to Town
Recently, Master Sommelier Edmund A. Osterland passed through Beijing to conduct a wine seminar hosted by ASC Fine Wines www.asc-wines.com. Osterland is one of only 148 Master Sommeliers worldwide and the very first American to pass the very demanding Master Sommelier examination. After attending the “Power Entertaining” seminar, we’re able to share with you some inside tips from the wine guru:
1. Serve the best first. You only have a 45-minute window of opportunity to “wow” your guest so why not start with the best wine.
2. Always start with Champagne. It gives your party a special start. Most people only drink Champagne on special occasions and rarely use it in regular parties. The French always receive their guests with Champagne.
3. Serve 2 wines simultaneously. That way, guests will have the chance to compare the two wines. “Pairings” adds an intellectual component to the party.
4. Use food-friendly wines to further enhance the flavors of the wine. Shrimps work best with white wine and steaks go well with red wine. Of course, bread and cheese are always a good stand-by.
5. Keep foods and wines in perspective; never let one overwhelm the other. You don’t want your guests to be full on hors d’ oeuvres; things taste better when you’re hungry.
6. Remember the 3 B’s: Beverage, Better, Best. Always provide a beverage such as water or champagne, a good wine and a best wine.
7. Chill all reds just slightly. Red wines at around 18 degrees Celsius taste the sweetest and has the most flavor.
