Preview: Sureno Welcomes New Chef Roberto Cimmino
Award winning restaurant Sureno, located in the Opposite House, has had a bit of a shake up recently, welcoming their new Chef de Cuisine Roberto Cimmino. Cimmino hails from the city of Marino in Lazio, Italy, just south of Rome. The smiley 29-year-old chef started cooking when he was just 14 and after graduating from culinary school he worked at top kitchens across Italy and China.
Chef Cimmino's new full a la carte menu won't be released until early September, but until then we got a sneaky peak of his style of cooking at a recent media launch. The menu is set to be put a southern Italian twist on staples such as pizza, pasta, and charcuterie. We tried a very tasty platter of some of their charcuterie (pictured above), sourced by the chef himself, including what he says is some of the only genuine bologna sausage in town. This was followed by a very competent risotto (a rarity in Beijing), flavored with a piece of bottarga (salted, cured fish roe), and topped with fresh caviar and micro-cilantro. The chef's advice to mix it all up and eat it together was well placed.
Despite only catch a brief glimpse of his talents, the chef and his dishes seem playful and fun – we're excited to see what is in store for him next.
