First up, I'm a big Barolo fan. I had high hopes for Aroma. Said hopes were quickly disappointed.
Seafood station was small, tough and tasted of the fridge. I ate a bunch of crab claws but hated myself a little afterwards. It's obvious that they re-use dressings and sauces from meal to meal, as there was a disturbed 'crust' on top of many salad dressings, seafood sauces, etc. Ew.
Cheeses - hard. Especially the brie. As hard as cheddar.
Hot food - lets not go there. Avoid the topic altogether. They had a barely-acceptable mushroom curry. Roast pork was dry, as was the Peking duck. An all-round fail, almost. Impressive for the Ritz-Carlton.
Sashimi station was acceptable, as was the bread. Salad bar is about standard. Desserts were - dare I say it - nice, but the fruit and ice-cream stations were just OK.
Granted, I had a friend staying there who treated me to the meal, so it wasn't like I was out any money, but it's something I wouldn't pay for.
