I have spent a lot of time in France so I know French food quite well. I have also eaten in many Michelin star restaurants (including multiple Michelin stars) so I am familiar with Michelin level food and service.
This restaurant is very disappointing.
I had a one course lunch and mineral water. The price was 500 yuan. For this price I would expect a high level of service and very good food, but I got neither.
The food wasn't terrible, but it was fairly tasteless and the portion was too small. The waiting staff were only slightly better than the average levels of service I am used to in China; obviously this is totally unacceptable in an expensive restaurant, especially one which is supposedly run by a Michelin star Chef.
I left hungry and disappointed. I would not eat here again.

The review is fair, except for an omission. The patissier working at S.T.A.Y. is extraordinary. Any dessert you order will be worth the price, but I recommend ordering by the ribbon (half-meter has four desserts or meter has eight desserts), which provides a unique opportunity to share. No place in town has desserts even close to being as good.
