A Simple Hearty Dish Inspired by Father's Day

A few days ago, while I was sitting at the dinner table with my dad, I asked him: What is your favorite vegetable? He immediately told me that it has always been tomatoes.

Though technically a fruit, it seems that the love for tomatoes runs in my family because, just like him, I am also a big fan of tomatoes as well. You won’t believe how many times my dad has cooked tomatoes for me when I was a kid. Now that Father’s Day is around the corner, I felt inspired to share with you this classic tomato and eggs recipe he uses.

 Ingredients:

1 and a half tomatoes
2 eggs
2 cloves garlic
2 tbsp ketchup
2 tbsp cooking oil
1 tsp salt
1 tsp Chinese soy sauce
1 tsp sugar

Method:

Step 1. Chop the tomatoes into small slices and set them aside.

Step 2. Crack the eggs into a small bowl. Season with half a teaspoon of salt and beat until combined.

Step 3. Add the oil and garlic to a pan over a high heat and let simmer. Then turn the heat to medium low. This step is important as you don't want to overcook the eggs! Pour in the eggs and stir them gently with spatula until no liquid remains. Transfer them to a bowl.

Step 4. Add some more oil into the pan and then add the chopped tomatoes. Add the remaining salt, the sugar, ketchup and soy sauce.

Step 5. Add the eggs back into the pan and stir them around with the tomatoes until everything is nicely combined. Then, turn off the heat.

Step 6. Give it a taste and adjust the seasoning to your liking. Depending on your taste, you might want to add more sugar or salt.
